Scott Blackwell and Ann Marshall built their Charleston distillery around exactly this kind of grain recovery, most famously with Jimmy Red corn, and here they mash the rye raw and unmalted so the grain's cereal sweetness and nutty side stay in front instead of being buried under spice.
